No. That's not true.

the contestants aren't "buying" a product or  service. They are
accepting a job offer.

That's still (supposed to be) a consensual exchange in the marketplace. That it's the labor market and not, say, the bear-rug market makes no nevermind.

When start a new job the HR department hands you an employment contract
that you have to sign before you start work. You don't get to see the
employment contract from all of their competitors

You should be able to, as part of your decision-making process.

What is your public-policy rationale for not having all the cards and terms above the table?
